In case you haven't noticed by my Facebook and Instagram accounts Brian and I celebrated our FIRST wedding anniversary last week! l know, I know, one year married isn't a huge deal to some but to me it's so special. I can't explain how nice it feels to overhear a conversation where I am referred to as a wife. Besides the obvious sentiment, it's just nice to know that I will always have someone out there to celebrate life's little mundane moments with such as our favorite songs on the radio, all-nighter road trips and our at home kitchen cooking challenges.
This year our anniversary fell on a Monday. Ahhh yesss Mondays get a lot of flack and aren't everyone's favorite day of the week, so we decided to stay in that night. We were also planning for a birthday trip later that week so staying in just felt right for us. We also felt that we should do the one thing that brings us both mutual excitement and happiness...cook and eat!! (Yes its true the way to both of our hearts is through food and we found our food soulmates in each-other). And so, we attempted to recreate one of our favorite meals from our honeymoon in Spain, seafood Paella! While in Spain we ate Paella almost every night we were there and If you aren't familiar with the rice dish we definitely recommend it! This would also be the first time we used our china which we received as a wedding gift (thanks Uncle Ken and Aunt Henny!). And to finish our favorite meal we also devoured a mini version of our wedding cake that Creative Cake Design by Tammy Hodge gifted us as a first anniversary gift.
Although we are not professional chefs, the meal couldn't have turned out better!!! We included, shrimp, scallops and lobster tail in our Paella as well as Spanish tomato bread as a side. And last but not least Key lime cake adorned with the same wedding cake toppers we used on our wedding day (the flavor of the cake paid homage to the state where we first met, Florida!).
